Masters of camouflage, cuttlefish are referred to as chameleons of the sea. There are over 10 species that inhabit Australian waters. Cuttlefish flesh is considered firmer and more flavoursome than squid. Due to the calcified internal shell, meat yield is only 50%.

The cuttlebone helps the animal with buoyancy so they can float higher or lower in the water column.

The briny flavour and dramatic colour of the ink sac will elevate pasta dishes, risottos and paellas.
