Silverfish sourced from Asia are more economical but less flavoursome than NZ Whitebait (Galaxiidae sp) which are considered a delicacy but very expensive.

Chinese silverfish are generally larger than NZ whitebait.

Tiny fish often cooked as a fritter using just the egg white to enhance the delicate, sweet flavour of these fish. They also make a nice addition to soups, noodle dishes or simply crispy fried.
