Unique looking fish with a small mouth and beak-like teeth and rough sandpaper skin. A single serrated spine on top of their head is used for feeding.

Beneath the inedible skin is a lovely sweet tasting flesh with a light flavour. Recovery rate of fillets is 30% and trunks 65%.

There are more than 60 species including; six spine, fan-belly, horseshoe and unicorn.

Often overlooked by consumers seeking more familiar fish species, the eating qualities of leatherjackets are underrated. Boneless fillets are delicious and sweet tasting. Leatherjackets are great value for money.
