Our Broadbill Swordfish are caught by pelagic longline gear in deep offshore waters of the Indian Ocean. Fish are found in depths to 550m and come to the surface to feed at night.
Swordfish are a fast-swimming predator that uses it long, flat bill to impale and slash their prey. Swordfish can grow to 4.5m and 500kg but are commonly found in 1.5-3m long and of 70-150kg. The bill accounts for one third of the total length.
Catches of Australian swordfish is limited to a total allowable catch limit, thus restricting the weight of fish that can be caught by each commercial fisher.
Swordfish steaks can vary in colour depending on the diet of the fish and have a very high oil content. The flesh is sweet tasting with a dense, meaty texture. The flesh is suited to barbecuing, grilling, frying and baking. It is also excellent for kebabs
