Sand Whiting

Whiting species of the Sillago genus are often referred to collectively as ‘sand whiting’. They are very alike in appearance, reflecting their very similar body shapes and colouration.

Our Eastern school whiting (Sillago flinders) are from Lakes Entrance in Victoria. These silver whiting are fast growing, resilient to fishing pressure and reach sexual maturity early.

Whiting is available in a natural de-boned butterfly fillet, a tempura batter and crumbed.

 King George Whiting is the largest of the whiting species.

Cooking Suggestions

Whiting are prized for their sweet, delicate flavour. Careful handling is required because of their soft and delicate texture. Most commonly whiting are fried either dusted in seasoned flour or coated in breadcrumbs/ batter.

Health and Nutrition

Whiting is a good source of several vitamins, including several of the B vitamins and vitamin D. It’s especially rich in vitamin A.
