The golden rule for cooking ink fish is over a high heat for short amount of time (<2min). Cook prepared squid in small batches. Squid is easy to clean – pull head out from body by pinching between the eyes. Cut tentacles from below eyes. Pull out quill and viscera. Pull wings and skin off.
