Whiting species of the Sillago genus are often referred to collectively as ‘sand whiting’. They are very alike in appearance, reflecting their very similar body shapes and colouration.
Silver whiting are fast growing, resilient to fishing pressure and reach sexual maturity early.
Whiting is available as natural de-boned fillets packed as random weights on a tray. We also sell them crumbed ready to pan fry or oven bake in handy 400g packs.
Whiting are prized for their sweet, delicate flavour. Careful handling is required because of their soft and delicate texture. Most commonly whiting are fried either dusted in seasoned flour, coated in panko crumbs or dipped in a tempura batter.
