Pearl Perch ‘pearlies’ are closely related to the iconic WA Dhufish but only grow to a maximum of 7kg with most caught in the 2-3kg range.

Found in deep offshore waters over rock ledges, pinnacles, wrecks and gutters. They are a pretty, silvery coloured fish with large eyes.

The name Pearl Perch is derived from the prominent bone that protrudes from the gill cover immediately above the pectoral fin. It is covered with a thin layer of skin which is easily rubbed off to reveal the bone’s pearly luster.

A creamy, sweet flavour that is universally regarded as one of the best tasting fish in the sea.

A fish best cooked simply like steamed or grilled then served with a flavoured mayonnaise or salsa.
