Sea Urchin (Kina) is considered a delicacy by Maori people. Female Kina roe are slightly more grainy than male roe which have a silkier texture.
A unique tasting shellfish with a flavour described as a creamy combination of sweet, sour, salty and bitter.
They are harvested by free divers from shallow reefs that surround Stewart Island and the Chatham Island.
The majority of Kina is consumed raw as sashimi but it can also be smoked, dried or used as asauce to flavour dishes.
Kina is sold fresh or frozen in 150g pottles.
