Caught in sheltered estuaries and mangrove areas, favouring soft muddy bottoms below low tide levels.
Mud crabs have sweet flesh which is of a slightly stronger flavour and firmer texture than other crabs.
There are two species of mud crabs – Green (S. serrata) which grow to 2.5kg with a 300mm carapace & Brown (S. olivacca) are smaller only reaching 1.5kg with a 150mm carapace.
Our cleaned mud crab halves weigh 300g + and are perfect to cook as a Singapore Chilli Crab dish.
