South African smoked cod is a fillet of skin on hake that has been flavoured by natural smoke and dye, hence resulting in a bright orange colouration.
Smoked cod is ideal to poach in milk and served with a creamy sauce. It is also great used in fish pies, for fish cakes or added to chowder or seafood stews.
